
The other day I saw caramel apples while I was walking through the grocery store and I was so tempted to buy them. It immediately inspired me to make my own, but that somehow turned into chocolate covered apple pops. And I say you have to embrace the inspiration whenever it finds you.

I started out by melting white chocolate chips in a double boiler with a bit of coconut oil to make it a creamy texture, which will make the dipping easier. Then I sliced an apple in about 1/4″ slices, making sure not to get any of the seeds or core in them. I basically cut around them to avoid them.

I sliced a tiny hole in the bottom center of the apple slices to make the popsicle stick easier to get in. Then I dipped each apple pop into the melted white chocolate and placed them on a foil lined baking sheet. Wax paper probably would have worked better but I didn’t have any on hand. The foil worked perfectly fine.



Next was the fun part. I drizzled caramel sauce over the cooled white chocolate. And I used some of my leftover edible Halloween goodies to decorate some of them. I may have got a little carried away, but it was so much fun!
CHOCOLATE COVERED APPLE POPS RECIPE
Ingredients
- 1-2 apples, I used Gala
- 8 ounces of white chocolate chips
- 1 teaspoon of coconut oil
- Caramel sauce to taste
- Edible decorations (optional)
Directions
- Slice the apples and place a popsicle stick through the bottom of each.
- Using a double boiler, melt the chocolate chips and coconut oil.
- Dip each pop into the melted chocolate and allow them to cool on foil or wax paper.
- Decorate each pop to your heart’s desire <3
- Enjoy
