ACAI BOWLS FOR DAYS

There’s this really cute raw juice place down the street from my house that I absolutely adore. I would go there everyday if I could but they are pretty spendy. They’re worth every penny, but still… I have bills, ya know? So I went on Amazon and bought myself some acai powder so can make my own at home. I don’t know why I didn’t think of this sooner. Now I can have acai bowls for days.

I prefer a creamy bowl so I used almond milk and Greek yogurt as the base. Strawberry yogurt to be exact. I tossed them into a blender then I threw in some frozen mixed berries (blueberries, strawberries and raspberries), vegan collagen, chia seeds and acai powder. I blended until everything was mixed well with a nice smooth and creamy texture.

Since this is officially fruit summer for me, I added some of my favorites on top of the acai base. I sliced up some bananas, strawberries and also added some whole blueberries and raspberries. The beautiful thing about acai bowls is that they are totally customizable. That cute little local juice shop I was talking about generally tops theirs off with bananas, coconut flakes, granola, strawberries and blueberries. They also have add-on options such as mango, pineapple, spinach and vegan protein powders. Here are some other toppings that would be good:

  • Chocolate chips/coco nibs
  • Blackberries
  • Almond slices
  • Kiwi
  • Pumpkin seeds
  • Pomegranate
  • Apple slices
ACAI BOWL RECIPE

Ingredients

  • 1/2 cup of almond milk
  • 1/2 cup of Greek yogurt
  • 1/2 cup of frozen berries
  • 1 banana, sliced
  • 3 strawberries, sliced
  • 1/4 cup of fresh raspberries
  • 1/4 cup of fresh blueberries
  • 1 tablespoon of chia seeds
  • 1 tablespoon of vegan collagen powder
  • 1 tablespoon of acai powder
  • 1 tablespoon of cashew butter

Directions

  1. Combine the almond milk, Greek yogurt, frozen berries, chia seeds, collagen powder and acai powder into a blender and blend until you get a smooth and creamy texture.
  2. Pour into a serving bowl and top off with bananas, strawberries, raspberries, blueberries then drizzle the cashew butter over top.
  3. Enjoy!
