
I’m cooking my way to happiness this summer. I’m determined to enjoy it and I have to admit that it’s going pretty well. This is definitely the summer of fruit and I think I’m going to make that a summer traditional from now on. Today I’m using fresh strawberries combined with cast iron roasted asparagus and the pair couldn’t be more perfect with this strawberry & asparagus salad.

I didn’t want the asparagus to be too roasted or crunchy so I let them roast in the skillet for just a few minutes to get them nice and soft. I also wanted the asparagus flavor to shine through so I used olive oil to roast them since the flavor is pretty mild. I’m a big fan of asparagus but for some reason I don’t eat it too often. It’s time to change that.

The strawberries add a beautiful contrast to the asparagus. They made me feel like I was in a garden so much so that this salad actually inspired me to eat it outside. And that’s with 95% humidity!

Since the asparagus and strawberry combination already offers so much flavor, I wanted to keep the dressing simple. I used balsamic vinegar, olive oil and a pinch of salt. It gave the salad a bit of tanginess and tied all of the rest of the ingredients together.

I wanted a bit more crunch so I chopped up about a half a cup of pistachios. It also added a gorgeous touch and I’m pretty proud at how pretty the salad turned out. Pretty and delicious, I love when that happens!
STRAWBERRY & ASPARAGUS SALAD RECIPE
Ingredients
- 2 cups of spring greens
- 10 asparagus tips, sliced
- 5 strawberries, sliced
- 1 tablespoon of balsamic vinegar
- 1 tablespoon of olive oil
- Salt, to taste
- Pistachios, diced (optional)
Directions
- Roast the asparagus tips in olive oil for a few minutes until they are softened.
- Combine the spring greens, roasted asparagus, strawberries and combine.
- Mix together the balsamic vinegar, olive oil and salt then drizzle over top.
- Top off with pistachios (optional)
- Enjoy!
