BAKED PEACH + GOAT CHEESE

If you haven’t noticed yet, I’ve been on a big peach kick. I’ve definitely been stepping my peach game up. I’ve felt very inspired by them and tend to gravitate toward them at the grocery store. They’re too good to pass up. And I can’t believe I’ve overlooked them this long. I love canned peaches but never really bought fresh ones, probably because their season seems to short and readily available. This baked peach + goat cheese dish is outstanding. It’s so simple yet so decadent at the same time.

I sliced up one peach and lined the pieces up against the edge of a circle baking dish. Then I rolled goat cheese into little balls and placed them on top of the peach slices. To make everything extra decadent, I drizzled balsamic vinegar and some chamomile (of course) on top. Then I baked it for about 15-20 minutes.

Once the cheese became gooey I took it out and sprinkled some roasted caramelized pecans on top and popped back in the oven for a few minutes.

Once it cooled a bit I scooped some over arugula for the most summer-est of the summer salads. It was like a dressing but it also added the perfect blend of hearty goat cheese flavor and soft and delicate sweetness offered from the peaches. I also spread some over baguette slices and I’m super impressed. It’s absolutely delicious.

BAKED PEACH + GOAT CHEESE

Ingredients

  • 1 peach, sliced
  • 1 goat cheese log
  • 1/2 tablespoon of balsamic vinegar
  • 1/2 tablespoon of chamomile tea, cooled
  • 1/2 cup of caramelized pecans (optional)

Directions

  1. Preheat oven to 350 degrees.
  2. Line a baking dish with the peach slices.
  3. Section the goat cheese log into equal sections, then roll them into a ball.
  4. Drizzle balsamic vinegar and chamomile tea on top then bake until the cheese becomes gooey.
  5. Sprinkle the caramelized pecans over top and throw it back in the oven for about 5 minutes or so.
  6. Enjoy!
