
Cookie + chocolate bars + graham crackers and marshmallows, yes. Yes. This s’mores skillet cookie is the ultimate summer cookie and I can’t get enough.

I borrowed my skillet chocolate chip cookie to make this baby, but I left out the chocolate chips since I wanted to add the Hershey’s chocolate pieces on top. As if there could ever be too much chocolate on a cookie.

I lined up all of my graham crackers, chocolate chip pieces and marshmallows on top of the cookie. Then I let the skillet bake for about 15-20 minutes, until it was nice and golden brown. It’s times like these that I wish I had a chiminea, or at least a fire pit with a grill over it. It would have been the ultimate if I could have baked these outside over the fire. One of these days!

So if you sometimes need a reminder of the reasons you enjoy summer, like me, this can be one of them. It’s also a reminder that fall is right around the corner. Yay!
S’MORES SKILLET COOKIE RECIPE
Ingredients
- 1 cup of flour
- 1 cup of marshmallows
- 1 king size Hershey’s chocolate bar
- 6 tablespoons of unsalted butter, softened
- 1/2 cup of sugar, I used turbinado
- 1/2 cup of dark brown sugar
- 1/2 cup of graham crackers, ground finely
- 1 egg
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of salt
Directions
- Preheat oven to 350 degrees.
- In a large mixing bowl, mix the butter and sugars until combined.
- Stir in the egg and vanilla until fully incorporated.
- Gradually mix in the flour, baking soda and salt until dough forms.
- Transfer to a greased skillet and add the Hershey’s pieces, marshmallows and ground graham crackers.
- Bake until golden brown (about 15-20 minutes).
- Enjoy!
