SUMMER PEACH CRUMBLE

It doesn’t get much summer-ier (I know… that’s not a word) than peaches. I noticed they were available in the grocery store and I had to swoop some up. I wanted to make something sweet and decadent, but I also wanted something a little lighter than a pie. A few months back, I made an awesome chamomile apple crumble and it inspired me to do something similar with my peaches! This peach crumble was incredible!

I have been on a mission to cut back on processed sugar, I have a serious sweet tooth and if I allow myself, I’ll eat sugary foods throughout the whole day. For the sake of my health, I have replaced my favorite sugary snacks with fresh fruit. I let myself eat as much of it as I want and I can have a sweet treat as long as I make it myself. I’m taking full advantage with this recipe!

This peach crumble has 2 parts. The first part is the peach filling and the second is the crumble. I used fresh peaches for my filling but canned peaches would totally work instead. Just note that they may make a runnier filling so either omit the juice or add cornstarch. Either way, it’s going to turn out amazing.

The crumble is a buttery brown sugar mix that pairs perfectly with the sweetness of the peaches. I wanted mine to be somewhat light since it’s warm as heck out so I didn’t add oats. It turned out so good that I ate all of it to myself. Oops! It took me 3 days but I devoured it.

SUMMER PEACH CRUMBLE RECIPE

Ingredients

Filling

  • 2 pounds of fresh peaches
  • 1/3 cup of sugar (I used turbinado)
  • 2 tablespoons of lemon juice
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of cinnamon
  • Pinch of salt

Crumble

  • 1 1/2 cup cup of flour
  • 1 stick of unsalted butter, melted
  • 1/2 cup of light brown sugar
  • 1/2 cup of sugar (I used turbinado)
  • 1/2 teaspoon of cinnamon

Directions

  1. Peel the peaches and cut them into slices.
  2. Preheat oven to 375 degrees.
  3. Combine the filling ingredients and mix well. Set aside.
  4. In a separate mixing bowl, combine the crumble ingredients until evenly coated.
  5. Pour the filling into a baking dish and top off with the crumble.
  6. Bake for 20 minutes, or until bubbly.
  7. Enjoy!
