SWEET TEA CUPCAKES

If you’re into baking for Valentine’s Day, here’s a fun recipe made out of sweet tea! Even if you’re not into Valentine’s Day, these cupcakes are delicious. And so unique!

The key is to use actual sweet tea. It’s such an easy trick to add some kick to traditional cupcakes. I like to top it off with lemon frosting. Like a proper sweet tea, you’ve got to add lemon.

To get the tea flavor, I infused the milk with black tea bags. It soaks the flavor into the milk and adds the flavor we’re looking for. I also added some of the infused milk to the frosting, but this is optional. I highly recommend it, but regular lemon frosting is good, too.

SWEET TEA WITH LEMON FROSTING CUPCAKE RECIPE

Ingredients

  • 1 1/2 cups of flour
  • 1 cup of granulated sugar
  • 1 cup of infused milk
  • 1/2 cup of vegetable oil
  • 5 black tea bags
  • 1 teaspoon of baking soda
  • 1 teaspoon of vanilla
  • 1/4 teaspoon of salt
  • 2 eggs

Frosting Ingredients

  • 2 cups of confectioner’s sugar
  • 2 sticks of unsalted butter, softened
  • Zest of 1 lemon

Directions

  1. Preheat oven to 350 degrees
  2. Infuse the milk with the tea bags
  3. Sift in the flour, baking soda and salt into the bowl of a standing mixer and combine with the paddle attachment.
  4. Mix in the sugar, vegetable oil, vanilla and eggs.
  5. Add half of the tea infused milk and continue mixing until combined.
  6. Line a cupcake tin with liners and pour in the batter.
  7. Bake for 15 minutes, then check them with a toothpick.
  8. In a medium bowl, cream together the butter with the paddle attachment.
  9. Add lemon zest and slowly add in the confectioner’s sugar.
  10. Add the rest of the tea and mix until combined.
  11. Allow the cupcakes to cool then spread the frosting on top.
  12. Enjoy!
