
There’s something about a crisp fall morning that makes it feel like waffle season. I love a savory breakfast, but a warm and hearty waffle in the mornings is extra special. Like these pumpkin spice waffles.

I took a traditional waffle recipe and added pumpkin puree and cinnamon and nutmeg. These flavors gave the waffles warm and hearty undertones, similar to a pumpkin spice latte. It was perfect for the chilly morning I had today.

Everyone has their favorite waffle toppings. I typically just do classic maple syrup. And there’s lots that would go well with these waffles. Such as:
- Chocolate sauce
- Fresh strawberries
- Butter
- Pecans
- Peanut butter
- Raspberry preserves
- Whipped cream
- Vanilla bean ice cream

I couldn’t resist garnishing with whipped cream. I’m so glad I did. The only thing I’m missing is the cherry on top.

This recipe feels like the most perfect October recipe. All year long I look forward to the recipes in October. They’re the most exciting in my opinion. And maybe even the best tasting.

PUMPKIN SPICE WAFFLES RECIPE
Ingredients
- 1 cup of flour
- 1/2 cup of pumpkin puree
- 1/4 cup of butter, melted
- 2 eggs
- 1 tablespoon of baking powder
- 1 1/2 teaspoons of sugar
- 1 1/2 teaspoons of vanilla extract
- 1 teaspoon of cinnamon
- 1/2 teaspoon of nutmeg
- Pinch of salt
Directions
- Combine the pumpkin puree, butter, eggs and vanilla extract. Mix until combined.
- Incorporate the flour, baking soda, sugar, cinnamon, nutmeg and salt. Mix until all ingredients are combined.
- Pour a spoonful of batter onto a heated (and greased!) waffle maker.
- Serve the waffles warm.
- Top off with maple syrup, whipped cream, chocolate sauce, jam or vanilla bean ice cream.
- Enjoy!
