PUMPKIN SPICE WAFFLES

There’s something about a crisp fall morning that makes it feel like waffle season. I love a savory breakfast, but a warm and hearty waffle in the mornings is extra special. Like these pumpkin spice waffles.

I took a traditional waffle recipe and added pumpkin puree and cinnamon and nutmeg. These flavors gave the waffles warm and hearty undertones, similar to a pumpkin spice latte. It was perfect for the chilly morning I had today.

Everyone has their favorite waffle toppings. I typically just do classic maple syrup. And there’s lots that would go well with these waffles. Such as:

  • Chocolate sauce
  • Fresh strawberries
  • Butter
  • Pecans
  • Peanut butter
  • Raspberry preserves
  • Whipped cream
  • Vanilla bean ice cream

I couldn’t resist garnishing with whipped cream. I’m so glad I did. The only thing I’m missing is the cherry on top.

This recipe feels like the most perfect October recipe. All year long I look forward to the recipes in October. They’re the most exciting in my opinion. And maybe even the best tasting.

PUMPKIN SPICE WAFFLES RECIPE

Ingredients

  • 1 cup of flour
  • 1/2 cup of pumpkin puree
  • 1/4 cup of butter, melted
  • 2 eggs
  • 1 tablespoon of baking powder
  • 1 1/2 teaspoons of sugar
  • 1 1/2 teaspoons of vanilla extract
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • Pinch of salt

Directions

  1. Combine the pumpkin puree, butter, eggs and vanilla extract. Mix until combined.
  2. Incorporate the flour, baking soda, sugar, cinnamon, nutmeg and salt. Mix until all ingredients are combined.
  3. Pour a spoonful of batter onto a heated (and greased!) waffle maker.
  4. Serve the waffles warm.
  5. Top off with maple syrup, whipped cream, chocolate sauce, jam or vanilla bean ice cream.
  6. Enjoy!
