BLOODY PANCAKES

Three more weeks until Halloween! The rest of my posts this month will be Halloween related and I’m super excited about it! Today I’m sharing these bloody pancakes, which are very beginner friendly and the blood detail adds such a cute detail. I can’t handle it!

I’m going to split this recipe into two parts. The strawberry “blood” syrup and the pancakes. I made my strawberry sauce the day ahead of time, mostly because of lack of time, but also I was hoping the flavors could infuse together a bit longer while it chilled and thickened in the refrigerator.

I started by combining chopped strawberries, sugar and lemon juice then brought them to a low boil over medium-high heat. Then I covered with a lid and lowered to a light simmer for 15 minutes. Once the syrup cooled a bit, I poured it into an airtight container (Mason jar) and chilled it overnight.

The next morning I made the pancakes and drizzled the bloody strawberry syrup over top. Afraid it would come out translucent, I used lots of strawberries to make up for it (it added a lot to the flavor too.) I also thought thickening it up a bit longer might make more of an opaque color. I was right! I’d say it was perfect. What do you think?

BLOODY PANCAKES RECIPE

Strawberry “Blood” Ingredients

  • 3 cups of strawberries, chopped
  • 1/4 cup of sugar
  • 1/2 lemon, juiced
  • 1 teaspoon of vanilla extract

Pancakes Ingredients

  • 1 1/2 cups of flour
  • 1 1/2 cups of milk (I used almond)
  • 4 tablespoons (1/2 stick) of butter
  • 3 tablespoons of sugar
  • 1 tablespoon of baking soda
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • Pinch of salt

Directions

  1. Combine all of the ingredients except for the vanilla extract (save that for last).
  2. Bring the ingredients to a low boil over medium-high heat then lower to a low simmer. Cover with a lid.
  3. Once the syrup has cooled, transfer to an airtight container and chill in the fridge for at least an house (overnight preferred).
  4. In a large mixing bowl, combine the dry pancake ingredients. In a separate mixing bowl, combine the wet ingredients and whisk until fully combined.
  5. In a greased pan or griddle, heat 2 tablespoons of pancake batter about 3 minutes each side.
  6. Stack the pancakes and drizzle the strawberry syrup over top.
  7. Enjoy!
