
I’ve talked about my large sweet tooth and Snickers is one of my all-time favorites. I’ve had some inflammation issues so I’ve had to cut back on the sweets. So now I’m on a mission to find healthier alternatives and hopefully still enjoy sweets in moderation. Like this chocolate covered dates recipe. It’s basically a Snickers copycat recipe. They do taste a lot like Snickers if I do say so myself.

I started out with dark chocolate chips and melted them with a bit of coconut oil. Then I sliced little slits into one side of each of the dates. I used creamy peanut butter and chopped up a few peanuts and stuffed them inside the dates. I pushed a toothpick through a few of them to keep them enclosed while dipping them into the chocolate.

Once they are all covered, I placed them onto a parchment lined pan and allowed them to chill in the refrigerator until hardened. It took about an hour and a half to get them fully solid.

Then I removed the toothpicks and now they’re ready to be served! Keep them stored in the fridge until you’re ready to eat them because they will melt. Personally, I didn’t make it that far. I ate all of mine in one sitting so I no storage needed for me.

CHOCOLATE COVERED DATES (SNICKERS COPYCAT)
Ingredients
- 10 fresh dates
- 1/2 cup of chocolate chips, I used dark chocolate
- 1/2 cup of peanuts, chopped
- 2 teaspoons of creamy peanut butter
- 1 teaspoon of coconut oil
Directions
- Using a double boiler (or microwave) combine the chocolate chips and coconut oil and mix until fully melted.
- Slice each date down the center and stuff with a dollop of peanut butter and a pinch of peanuts.
- Using a toothpick, stick a few stuffed dates together to keep them from spilled out.
- Dip them into the melted chocolate until fully coated.
- Place them onto a parchment lined dish and allow them to set in the fridge.
- Remove the toothpick before serving.
- Enjoy!
