BANANA FRENCH TOAST ROLL UPS

It always feels like a special treat to enjoy a sweet breakfast. Typically I’m a savory type of girl when it comes to my morning meal. But I do love to throw in some sweetness every now and then. These banana French toast roll ups definitely do not disappoint.

When I do choose to have a sweet breakfast, I pretty much always add bananas. They are after all, my favorite fruit of all time. I wanted to wrap some up in French toast so that’s exactly what I did. Admittedly, I’m no French toast expert. As a kid I wasn’t a fan so I never ate them. Bread dipped in eggs wasn’t appealing to me. It wasn’t until I was an adult that I became interested in them, so I’m a little delayed in my French toast game.

It took a while to master French toast making. It’s difficult to get them perfect. In the beginning mine always came out crispy on the edges and soggy in the middle. It took a lot of trial and error to get them just right. I find this recipe is pretty beginner-friendly. Cutting out the crust makes it fail-proof.

Essentially I made French toast sticks with bananas inside. Let me tell you, when I see these are delicious, its an understatement. Words can’t describe how good they are. Yum.

BANANA FRENCH TOAST ROLL UPS RECIPE

Ingredients

  • 8 pieces of bread, cut into even squares with crusts removed
  • 2 eggs
  • 1 banana, sliced
  • 1/4 cup of whole milk
  • 2 tablespoons of creamy peanut butter
  • 3 tablespoons of granulated sugar, separated
  • 3 tablespoons of unsalted butter
  • 1 tablespoon of cinnamon
  • Maple syrup, to taste

Directions

  1. Using a rolling pin, roll out each slice of bread to about 1/4″ thick.
  2. Combine the sugar and cinnamon in a deep bowl. Set aside.
  3. Using a small bowl, whisk the eggs and milk. Set aside.
  4. In a skillet over medium heat, melt the butter.
  5. Spread the peanut butter on each slice of bread and roll them up nice and tight.
  6. Dip each roll into the egg mixture then place them into the skillet, cooking them for about a minute or 2 per side.
  7. Roll them into the reserved cinnamon and sugar mixture.
  8. Serve immediately.
  9. Enjoy!
