TOASTED SESAME SUGAR

I am a huge sesame seed fan. I love the nutty flavor and I feel like they make meals more exciting. I made toasted sesame sugar to add to my tea and I’m pretty much obsessed with it now.

Sugar made out of sesame seeds might sound a little weird, I know. But sesame syrup exists, so why not sugar, too? You have to try it. It’s really good. I liked it in both sweet and earthy tea blends.

It’s also a great addition to pastries. A little sprinkle of this sugar and it completely changes the feel of the food. Think tahini. It’s so versatile and it adds an exotic nuance.

I store my toasted sesame sugar in small tins. I like them because I can throw them into my purse, making it easy to carry with me on the go. They also make lovely gifts.

TOASTED SESAME SUGAR RECIPE

Ingredients

  • 2 1/2 cups of water
  • 1 1/2 cups of sesame seeds
  • 1 1/2 cups of sugar

Directions

  1. Grind the sesame seeds using a pestle and mortar or a coffee grinder.
  2. Add the seeds to a medium saucepan and toast over medium-low heat until it leaves a nutty aroma.
  3. Add sugar and water and stir until the sugar has fully dissolved.
  4. Raise the temperature to medium heat and bring to a simmer.
  5. Simmer for 40 minutes then strain the separate the liquids from the solids.
  6. Discard the solids and allow the liquids to cool (they will crystalize into sugar).
  7. Store in a tin or small jar.
  8. Enjoy!
