
The end of summer is upon us. This end of summer salad is the perfect recipe to wrap up the summer. As a die hard lover of all things fall, I couldn’t be more excited about the changing season. To be honest, this was a weird summer for me. I went through a lot of changes and am about to embark on a pretty big transition in my personal life.

In just a few days I’ll be leaving New England and relocating to the Mid-West. This is huge. It’s both exciting and terrifying at the same time, but I know it’s the right step for me.

This salad is an accumulation of some of my favorite summery ingredients. Peaches, of course. I ate a lot of peaches this summer. The dressing is a delicious blend of cilantro, serrano peppers, garlic and lemon juice. It’s very light with a pop of spice from the peppers.

This recipe is more of a representation of change for me. It’s a reminder to remain courageous and curious. And to keep moving forward without letting fear stop me. It might be the end of summer but it feels like the end of a chapter.

END OF SUMMER SALAD
Ingredients
- Salad greens
- 1 bell pepper, diced
- 1 peach, diced
- 1 apple, diced
- 1 cup of cherry tomatoes, sliced
- 1/2 cup of feta
- 1/4 cup of pepitas
Cilantro Lime Dressing Ingredients
- 3/4 cup of fresh cilantro, chopped
- 1/3 cup of olive oil
- 3 tablespoons of freshly squeezed lime juice
- 1 tablespoon of honey
- 1 garlic clove
- Pepper, to taste
- Salt, to taste
Directions
- Combine all of the cilantro lime dressing ingredients into a food processor and mix until incorporated. Refrigerate until ready to use.
- Mix all of the salad ingredients together then pour over the dressing.
- Serve immediately.
