
I’m a sucker for snacks. I’m more of a grazer than a meal eater so this peach caprese salad is right up my alley. I wanted to do a summer twist on a classic caprese salad and I thought what would be more perfect than adding peaches? It’s the ultimate summer snack.

Traditionally, we’ve got mozzarella, tomatoes and basil. The peach flavor really sweetens things up a bit and makes it feel like a dessert. I also like to drizzle balsamic vinegar overtop. To make things even more special I also drizzled some chamomile tea. Because I love chamomile tea!

Peach caprese salad is perfect for an outdoor picnic, potlucks, a fancy tea party, birthday parties, or if you’re like me a delicious snack for yourself. It’s such a versatile recipe and it’s also so beautiful plated, making it pretty difficult to resist.

Originally I planned on making a balsamic reduction for this recipe, but since it’s summer and the weather is pretty warm, I didn’t want to turn a burner on. I would definitely make a reduction if it were any other season. I found that the lightness of simple balsamic vinegar was perfect. It wasn’t too heavy, which I was afraid would happen with the reduction. Same with the chamomile. In colder weather, it would be perfect as a simple syrup. I’m definitely going to modify it a bit in the fall or winter and see how it turns out. I’m pretty excited about it!
PEACH CAPRESE SALAD
Ingredients
- 1 package of sliced mozzarella cheese
- 1 tomato, thinly sliced (I used 15 slices)
- Basil leaves (I used 15)
- Balsamic vinegar
- Chamomile tea
Directions
- Layer a slice of mozzarella cheese, tomato and basil leaf.
- Repeat the layers until all ingredients are used.
- Drizzle over balsamic vinegar and chamomile tea.
- Enjoy!
