IRISH COFFEE JELLO SHOTS

St. Patrick’s Day is just around the corner. I live in a small town with a pretty large Irish community. We have an Irish day parade that’s a really big deal, hundreds of people come to watch it and the town pretty much shuts down for it. Irish coffee is a huge deal that day, so I figured why not make Irish coffee jello shots?

Everyone loves jello shots, right? Especially on a day of celebration when the town is squished in with tons of extra people, jello shots are just the thing. I’m going to share how I made them here. They were fun to make and even more fun to eat!

I made mine booze-free. If you prefer a boozy jello shot then cut the Bailey’s in half (1/4 cup) and use 1/4 cup of Irish whiskey. Also, technically this recipe isn’t 100% alcohol-free. Bailey’s does have 17% alcohol content. So I guess that would make this recipe 83% alcohol-free.

IRISH COFFEE JELLO SHOTS

Ingredients

  • 1 cup of brewed coffee, hot
  • 1/2 cup of Bailey’s, hot
  • 2 1/2 packets of gelatin
  • 1 1/5 tablespoons of granulated sugar

Directions

  1. Line a 8″x4″ baking dish with plastic wrap. Set aside.
  2. In a medium bowl, add the hot coffee and sugar. Whisk until the sugar has dissolved.
  3. Mix in half of the gelatin and quickly whisk until dissolved.
  4. Pour the mixture into the reserved baking dish and poke holes in the jello using a toothpick.
  5. Chill in the refrigerator at least 2 hours.
  6. Once the mixture has cooled completely, get a double boiler and heat the Bailey’s. When the Bailey’s begins to simmer, pour it into a medium mixing bowl.
  7. Whisk in the remaining gelatin then add the Bailey’s.
  8. Pour on top of the chilled coffee jello then refrigerate at least 2 hours.
  9. Slice into squares with a sharp knife.
  10. Store in the refrigerator until ready to serve.
  11. Enjoy!
