
Can you believe it’s almost 2023? This year has flown by, and I’m not mad about it. I think it’s going to take some time to actually process and evaluate how the year went, but I’m definitely ready to see what the next year has in store. Until then, lets talk about how we’re going to celebrate the new year! I want to start off with a delicious champagne recipe for the new year count down. There’s absolutely nothing wrong with plain champagne, but why not make it special? This blackberry lavender tea champagne has good vibes for 2023 written all over it and it will surely make your celebration extra special.

To begin, brew a fresh cup of lavender tea. Pour one cup into a small saucepan, then add granulated sugar and fresh blackberries. Simmer for about 10-15 minutes, be sure to mix constantly so the berries don’t burn. Remove the saucepan from the heat and strain the syrup into a heat-safe measuring cup or mason jar. Cool the syrup to room temperature then chill it in the refrigerator for 30-45 minutes.

Once you’re ready to pop the champagne, rim your champagne flutes with sugar then pour the blackberry lavender tea syrup into the bottom of the flutes. Top off with champagne and you’re ready to celebrate!

BLACKBERRY LAVENDER CHAMPAGNE RECIPE
Ingredients
- 1 cup of freshly brewed lavender tea
- 1 cup of granulated sugar
- 1 cup of blackberries
- 1 bottle of champagne
- Lavender sprigs (optional)
Directions
- Brew the lavender tea. I used 2 lavender tea bags to make sure the flavor really pops in the recipe.
- In a small saucepan, add 1 cup of the freshly brewed tea, granulated sugar and blackberries. Simmer over medium heat, constantly mixing to avoid burning the blackberries.
- Simmer for 10-15 minutes, or until the blackberries have become pretty mushy and lighter in color.
- Strain the blackberry lavender syrup into a measuring cup or mason jar and allow it to cool to room temperature.
- Once the syrup has cooled, chill it in the refrigerator for 30-45 minutes,
- Rim your serving glasses with sugar, then pour the blackberry lavender tea syrup in the bottom of the glasses.
- Top off with champagne and add a sprig of lavender as a garnish (optional)
- Enjoy!
