
Christmas is just days away. Can you believe it? This year has completely flown by. A part of me is grateful and another part wonders where all of the time went. I do know that I’m going to try to take the time to remember more next year. If you’re looking for a last minute appetizer or side-dish, you’ve found it. Orange-ginger cranberry tarts are so delicious and easy to make. It takes just a few minutes to prepare then the oven does the rest.

This recipe uses orange-ginger tea which adds a beautiful, complex warming flavor. These tarts also have sweet blueberry preserves that pairs wonderfully with the tartness of the cranberries. They’re Incredible.

You will need:
- Puff pastry
- A wheel of brie
- Whole cranberries
- Blueberry preserves
- Orange-Ginger tea
- Butter
- Brown sugar
- Ground cinnamon
- Fresh rosemary

Preheat your oven to 425. Then cut the puffy pastry into 8 equal rectangles. Scoop the blueberry preserves in the middle of each rectangle, leave a bit of room on the edges to avoid making a mess when folding the pastry. Infuse the butter with orange-ginger tea and combine in a mixing bowl with cranberries, brown sugar and cinnamon. Scoop the cranberry sugar mix on top then bake for 20 minutes.

ORANGE-GINGER CRANBERRY BRIE TARTS
Ingredients
- 1 package of Puff Pastry
- 1 wheel of brie
- 2 cups of whole cranberries
- 2 tablespoons of unsalted butter
- 2 tablespoons of blueberry preserves
- 1 tablespoon of ground cinnamon
- 1 teaspoon of orange-ginger tea
- Rosemary sprigs (optional)
Directions
- Using a double boiler, melt the butter and steep the tea for 5 minutes. Set aside.
- Roll out the puff pastry and cut 8 equal rectangles.
- Spoon a bit of blueberry preserves in the center of each pastry, leave about a 1/2 inch border to allow room for folding.
- Slice the wheel of brie into 8 equal sections then place a section on top of the blueberry preserves in the center of the pastry.
- In a medium mixing bowl mix the reserved tea butter, brown sugar and cinnamon.
- Scoop about a tablespoon in the center of each pastry.
- Fold the edges of the puff pastry into the center and pinch the dough together.
- Use a fork to crimp the edges then place them in the oven for 20-25 minutes, or until golden brown.
