ELDERBERRY + ECHINACEA WAFFLES

How are you making it through this winter? We’ve been doing a lot of cooking around here and it’s definitely making this dark season much brighter. I personally love to cook, so I hope this desire sticks around. These elderberry + echinacea waffles are just what I needed.

I infused unsalted butter with elderberry + echinacea tea from Pukka. If you’re not sure how to do that, I wrote about it here. It adds the tea’s flavors and essence to the waffles. It’s magical. Seriously, these are a winter dream.

I like to top off my waffles with maple syrup and butter. Actually adding butter to my waffles and pancakes is pretty new for me. I typically like my food to be dry (even bread!). But lately I’ve been adding butter to things. I’m not sure why I’m doing it now, but I’m enjoying it, that’s for sure.

I also used elderberry syrup on top and it was perfect! I share how to make your own here. Whipped cream would also be amazing. Maybe a drizzle of chocolate sauce, too. While we’re at it, why not a cherry on top? Whatever suits your fancy.

ELDERBERRY + ECHINACEA WAFFLES

Ingredients

  • 1 cup of flour
  • 1 cup of whole milk
  • 1/2 stick of elderberry + echinacea tea infused unsalted butter, melted
  • 2 eggs
  • 1 teaspoon of baking powder
  • Pinch of salt
  • Maple syrup, to taste
  • Butter (for use as a topping, optional)
  • Powdered sugar (for use as a topping, optional)

Directions

  1. In a large mixing bowl, add all of the dry ingredients and blend until mixed.
  2. Add the wet ingredients and mix until all ingredients are combined.
  3. Cook the batter onto a heated waffle maker
  4. Top off with butter (optional), powdered sugar (optional) and maple syrup.
  5. Enjoy!
