
Today is Valentine’s Day! I swear it was just New Years like a minute ago. I know it doesn’t seem like it because I’ve brought it up so much lately but I don’t really celebrate Valentine’s Day in the traditional sense. The novelty of it is my favorite part. Most people don’t love the commercialization of it, but I think that’s my favorite part. I like heart-shaped things, I love flowers and I love chocolate. All of the capitalist things about the day are my favorite. Unpopular opinion, I know. But I am who I am. To add to that sentiment, I’m sharing a lovely recipe perfect for the “holiday”. Red velvet coffee brownies! Yep, they’re made out of coffee.

I used Betty Crocker’s supreme original brownie mix. Now normally I would try to make them from scratch but the premade mix really is the best. Plus, with the addition of coffee, it makes it so unique.

The cream cheese frosting really sets it off. It’s the perfect compliment to the coffee flavor in the brownies. I’m such a sucker for moist brownies and a soft cream cheese duo. I really enjoyed these. They didn’t last long at all after I made them.

RED VELVET COFFEE BROWNIES
Ingredients
- Betty Crocker’s Supreme Original brownie mix
- 2 teaspoons of finely ground coffee beans
- 2 teaspoons of red food coloring (I used gel food coloring)
Cream Cheese Frosting
- 4 cups of confectioners sugar
- 8 ounces of cream cheese, softened
- 1/2 cup of unsalted butter, softened
- 2 teaspoons of vanilla extract
Directions
- Follow the instructions for the brownie mix.
- Add the coffee grounds and food coloring
- While the brownies are baking, cream the butter and cream cheese in a large mixing bowl.
- Gradually add the confectioners sugar until fully combined.
- Add the vanilla extract and mix until fully incorporated.
- Once the brownies have baked, allow them to cool then add the cream cheese frosting.
- Enjoy!
