BROWNIE DIRT PUDDING CUPS

I’m having a lot of fun making these Halloween recipes. And also, what an awesome time of the year! I’ve been going through quite a bit in my personal life so making light-hearted and fun recipes are really lightening up my mood and inspiring me to keep going. Like these brownie dirt pudding cups. They consist of three layers: brownie, chocolate pudding and Oreo crumble. Now this is not something I’d normally make. But Halloween made me do it.

And I want to say thank you to Halloween. It’s my muse. I’ve never lost the childhood magic feeling that it brings. If anything, Halloween as an adult only reinforces that childhood magic.

This recipe essentially has two parts. Well, technically three but the third part consists of mashing up Oreos, so it’s more of an ingredient. To begin, I started with the chocolate pudding. It needs to set overnight so I made it first. Then, the next day I made the brownies. You could also make the brownies ahead of time as well, if that works best for you.

The last step is to crumble the mashed Oreo’s overtop and garnish with gummy worms. So cute! Store them in the refrigerator until ready to serve.

BROWNIE DIRT PUDDING CUPS RECIPE

Pudding Ingredients

  • 1 can of coconut milk (full fat)
  • 1/2 cup of almond milk
  • 3 ounces of chocolate chips
  • 1/3 cup of honey (or sweetener of choice)
  • 1/4 cup of dutch cocoa powder
  • 3 tablespoons of cornstarch
  • 3/4 teaspoon of vanilla extract
  • Pinch of sea salt

Pudding Directions

  1. Heat the coconut milk, salt, cocoa powder and sweetener in a medium saucepan over medium heat.
  2. In a medium mixing bowl, whisk the cornstarch and almond milk until incorporated.
  3. Add the cornstarch mixture to the heated coconut milk and cocoa mixture, whisking constantly. Bring to a boil and continue whisking for 2 minutes.
  4. Lower the temperature to a simmer and keep stirring for another 2 minutes.
  5. Remove the saucepan from the burner and stir in the vanilla and chocolate chips.
  6. Refrigerate to set the pudding overnight.

Brownies Ingredients

  • 10 tablespoons of butter, melted
  • 1 1/4 cups of sugar
  • 3/4 cup + 2 tablespoons of cocoa powder
  • 1/2 cup of flour
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • Pinch of salt

Brownie Directions

  1. Preheat oven to 325 degrees.
  2. In a large saucepan combine the butter, sugar, cocoa powder and salt until all ingredients are incorporated.
  3. Remove the saucepan from the heat and mix in the vanilla and eggs.
  4. Add the flour to a separate mixing bowl then pour in the cocoa mixture. Beat until the consistency becomes very thick.
  5. Pour into lined cupcake tins and bake for 25 minutes.
  6. Allow the brownies to completely cool.
