
For me, summers are all about salads. I love the challenge of finding different salads that don’t seem repetitive or boring. This watermelon salad is neither of those. If you’re looking to spice up your regular boring salad, look no further. This one is a gorgeous and delicious blend of whole and nutritious foods.

I used a mini watermelon for this recipe since I was the only person eating it. If you’ll be serving multiple people, I’d suggest a full sized watermelon. If you happen to find with seeds, be sure to remove them before serving. The white seeds are ok, of course. Have you noticed that watermelons at the grocery store don’t have seeds anymore? How weird is that? It’s like they disappeared somehow.

Cucumber is the perfect compliment to the melon. I love the crunch texture it provides and cucumber melon go so well together. I spent a lot of time at Target as a kid and I specifically remember they sold a cucumber melon scent I was borderline obsessed with. This recipe brings me back to those days.

I topped it off with diced avocado, basil leaves and feta. I wanted a subtle dressing so I combined agave nectar and freshly squeezed lime juice. The salad is a mixture of sweet flavors with earthy and a touch of salty. It’s pretty perfect. The dressing definitely sets it off.
WATERMELON SALAD RECIPE
Ingredients
- Half of a mini watermelon or 1/4 of a full size watermelon, sliced
- 1 cucumber, sliced
- 1/2 avocado, diced
- 12 basil leaves, chopped
- 1/2 cup of feta
- 2 tablespoons of agave nectar
- 2 tablespoons of freshly squeezed lime juice
Directions
- Combine the watermelon, cucumber, avocado, basil and feta.
- In a small bowl, whisk the agave nectar and lime juice.
- Pour the agave and lime dressing over the watermelon blend and mix well.
- Enjoy!
