
I’ve been eyeing this tub of strawberry shortcake glaze at the grocery store. It’s given me a hankering, but I don’t love the chemically processed stuff. Instead I wanted to try my hand at making my own, and I have to say it turned out pretty well! I turned it into chamomile glazed strawberry shortcake.

I used sweet biscuits, which I borrowed from a previous recipe. You can find that here. It paired perfectly with the chamomile and strawberries.

CHAMOMILE GLAZED STRAWBERRY SHORTCAKE RECIPE
Ingredients
- 1 pound of strawberries, sliced in half
- 1/4 cup of granulated sugar
- 1/2 tablespoon of fresh lemon juice
- 1/2 tablespoon of freshly brewed chamomile tea, chilled
- 1 teaspoon of cornstarch
Sweet Biscuits Ingredients
- 2 cups of flour
- 1 cup of buttermilk, chilled
- 6 tablespoons of unsalted butter, cold
- 1 1/2 tablespoon of sugar
- 1 tablespoon of baking powder
- 1/4 teaspoon of baking soda
- Pinch of salt
Directions
- In a medium saucepan, add the strawberries. Set aside.
- Mix the lemon juice, tea and cornstarch in a medium mixing bowl.
- Pour the mixture over the strawberries and bring the mixture to a boil.
- Reduce the heat to medium-low and simmer until the strawberries are soft and slightly thickened.
- Preheat oven to 450 degrees.
- In a large mixing bowl, combine the flour, sugar baking soda, baking powder and salt.
- Quickly chop up the butter into little pebbles. It’s important to work quickly here so the butter doesn’t melt. Cold butter is the key here.
- Add the butter to the flour mixture and quickly mix until combined.
- Form a hole in the middle of the mixture and add the buttermilk. Mix until combined. The dough will be tacky.
- On a floured surface, drop the dough and fold it onto itself 6 times (this will create 6 layers) and quickly work it down to about an inch in thickness.
- Cut out the biscuits and bake in a cast iron pan for 12-15 minutes.
- Sprinkle sugar on top and allow the biscuits to cool before serving.
- Slice the biscuits in half horizontally and pour the chamomile strawberry glaze on top of the biscuits.
