I have this really vivid childhood memory of toast. It’s waking up to the smell of freshly toasted toast and the sound of my grandma tapping her sugar spoon against her cup of coffee as she stirs in the crystals. She dipped her toast into her coffee and would share with me if I got out of bed in time. It happened almost every sleepover at grandma and grandpa’s house. I was so excited to be able to have some coffee, even if it was just soaked into toast, that the sound of the spoon got me out of bed right away. I like to add a little cinnamon to my toast now, but often I’ll catch myself dipping it into coffee. Memories, man.

Anywho, I wanted to share a fun way to make cinnamon toast even more exciting with the addition of tea butter. Way back I share how to make tea butter here. If you need a quick refresher, it basically goes like this: slowly melt butter while it’s infused with tea. It’s a super easy way to add nuance and flavor into your butter.

I suggest to use a double boiler to prevent burning the delicate herbs in the tea. Melting the butter in the microwave or carefully using a pot of low heat will work as well. Infuse the tea for about 5 minutes to allow the flavor notes to seep into the butter.
I generally use tea with more subtle notes when I infuse my butter. But it really varies depending on how I’ll be using the butter. For cinnamon toast I like to use some of the following:
- Lavender
- Rose
- Lemon balm
- Jasmine
- Chamomile
- Lemon
- Orange
