COFFEE MAPLE OVERNIGHT OATS

There’s something so wholesome about oatmeal for breakfast. It’s traditional, filling, delicious and easy to make. It’s completely customizable, which is probably my favorite thing about it. For those who don’t have time to cook breakfast in the mornings, oatmeal can be prepared the night before. The oats soak overnight and are soft and ready for you the next morning. Today I’m sharing a delicious recipe for coffee lovers. Coffee maple overnight oats is so easy to make and if you’re really in a rush, It’ll save you time waiting for the coffee to brew and the breakfast to cook. Two birds one stone!

To make the oats creamy, I use almond milk and Greek yogurt. It also adds healthy protein to fuel your morning. Coffee and maple syrup are a wonderful combination for breakfast, they add a delicious sweet coffee flavor, and can also give a boost of energy. Rolled oats and chia seeds provide a nice texture and prevent over-mushiness. I love to top it off with a bit (ok, maybe a lot) of whipped cream and a chocolate sauce.

All of these ingredients are totally customizable, feel free to substitute any of these ingredients for your favorites. Make it your own. Whatever you do, I hope you love it!

COFFEE MAPLE OVERNIGHT OATS RECIPE

Ingredients

  • 1/2 cup of rolled oats
  • 1/2 cup of almond milk
  • 1/4 cup freshly brewed coffee
  • 3 tablespoons of plain Greek yogurt
  • 1 tablespoon of maple syrup
  • 1 tablespoon of chia seeds
  • 1 pinch of salt
  • Whipped cream to taste (optional)
  • Chocolate sauce to taste (optional)

Directions

  1. In a small jar, combine the oats, chia seeds and salt.
  2. Pour over the almond milk, freshly brewed coffee and maple syrup.
  3. Add the yogurt and stir until all ingredients are combined.
  4. Cover the jar with plastic wrap and store it in the refrigerator overnight (at least 4 hours).
  5. Top off with whipped cream and chocolate sauce if desired (optional).
  6. Enjoy!
